I came across this recipe on pinterest and knew I HAD HAD HAD HAD HAD to try it! I am a lover of thai food and what better way to mix anti-inflammatory and thai! A Pad Thai Salad!
Well, as you know I’m a professional recipe tester NOT a chef… and in all my other posts you’ve seen I’ve messed something or other up. In this recipe I definitely added TOO MUCH apple cider vinegar. Learn from my mistake please. Don’t do this. It still tasted alright, but I then remade the dressing the next day and it was 10000% times better than the over vingerary dressing I had the night before. I did change the cashews to some chopped up macadamia nuts (since I can’t have peanuts at this moment!) and I still loved it. Brought a good crunch to the salad. Also- I thought I would miss having protein in this salad, but I didn’t! Although, this salad would definitely be delicious with some chicken or shrimp. Yuuummmmmmy!
