Chew On This: Gluten Free Veggie Pasta

For the last 11 weeks I haven’t had pasta or tomatoes and I’ve missed them SOOOOO!! This week I’m incorporating tomatoes back into my diet to see how I feel. Yesterday I was supposed to eat 3 servings, but I actually only got to eat 2 raw slices on a bison burger for lunch. So I figured today I’d eat more and what better way than to make a pasta!!

This recipe spurred from the ingredients that were in the fridge. You can take this as a jumping off point and really add/omit anything you want!

Ingredients

Instructions
  1. Chop (either by hand or use an electric chopper) the carrots, celery, onion & garlic.
  2. Using EVOO, sautee carrots, celery, onion, garlic & seasonings in a sauce pot.
  3. Puree 4 of the tomatoes. Stir into sauce pot.
  4. Cut the last tomato into chunks and add to sauce pot.
  5. Continue to simmer until the rest of your dinner is done!
  6. Boil water and cook noodles according to the package instructions.
  7. Spirilize the zucchini and chop up the mushrooms.
  8. In EVOO, sautee the zucchini and mushrooms until cooked through. Season with salt and pepper to taste.
  9. Add in the organic greens and cover until done.
  10. Plate the pasta, top with the zucchini, mushroom, greens mix and smother with the chunky tomato 'sauce'.
  11. Enjoy!!
